I’m Carina, a 26 year old plant based gal living in the beautiful North East of England.
Three years ago I graduated from uni with a degree in fine art, but currently I work as a barista, making the best coffees in Durham of course. In my spare time I enjoy gardening, practicing yoga and singing with my choir. I am also an avid reader, serial Netflix watcher and have a passion for good food, coffee and travel.
In brief , Simply Carina xo is about my journey to living a more sustainable and low impact life. Leading a more eco-friendly and plantbased lifestyle has become such a big passion of mine; it continually puts a smile on my face knowing I am trying to change something for the better. This is the first time in my life that I’ve really felt a drive for something and I can’t wait to see where it takes me!
My New Years resolution for 2018 was to transition to a plant based diet after having watched many eye opening documentaries about the meat and dairy industries exploitation and mistreatment of animals and the sheer scale of the devastating environmental impact animal agriculture has on our planet. Thus in January 2018, after already having reduced my meat and dairy intake throughout 2017 (especially because I suspected I might be lactose intolerant), my first port of call was to switch to a fully vegan diet. My love for cooking and baking made the change quite easy and fun as it started me on a road of discovery, experimenting with new delicious and healthy plant based recipes.
As time progressed however the issues surrounding veganism such as climate change also became more and more important to me. Just eating a plant based diet wasn’t good enough for me anymore and so began my journey to also trying to live a more eco friendly life, especially by reducing my plastic footprint. I love learning about new ways to lead a more low impact life and have already implemented many switches as well as created new habits to help me along my eco way (such as using a biodegradable bamboo toothbrush instead of a plastic one and making sure to always carry a reusable shopping bag around with me). In one bid to reduce my plastic footprint, my housemate Jessica and I have also started planting our own vegetables and are loving the process of learning to be more self sufficient. Tending to our garden and harvesting home grown food has definitely become our biggest hobby and brings such joy into our household, even if it currently means giving up our dining room to be a temporary overgrown tomato greenhouse.
